This is a tasty low carb breakfast option for mommas (and papas) on the go! I love to make a batch of these and stash them in the fridge for a quick and easy breakfast that keeps us full all morning long. One of these babies makes a filling breakfast, but sometimes we’ll have one and a half if we’re particularly hungry. I think you’d have to be a lumber jack to eat two… or one of my teenage sons.
I call these bombs because, well, they’re the bomb. And it had the whole alliteration thing with broccoli and breakfast thrown on there. These are really just dense, egg muffins packed with sausage, cheese, and veggies. Almond meal and Oat Fiber give these a bit more weight and keep you feeling full.
Broccoli Breakfast Bombs
Ingredients:
- 10-12 eggs
- 2 cups shredded cheese – sharp cheddar gives a more robust flavor
- 1 pound ground sausage, cooked – other meats work well too
- 1-2 cups chopped broccoli
- 1/2 cup diced green onion
- 1/2 cup salsa
- 1 cup almond meal
- 1 cup oat fiber
- 1/4 cup dried parsley
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon baking powder
In a large bowl, add eggs and mix well.
Next add remaining ingredients.
Stir to mix well. If you have a sous chef or small kitchen helper, let them get in there and stir a bit. It makes everything taste better when you have helpers.
Prepare a muffin pan with non stick cooking spray and fill about 3/4 full. These will rise a little during baking, but not too much.
Bake at 350 for 20-30 minutes, until cooked through and browned on top.
Allow to cool and store in a ziplock bag or sealed container with a paper towel to wick away excess moisture. To reheat, simply microwave for about 30-45 seconds per muffin.
